I love watermelon. I love pizza. And as of today, I love watermelon pizza. Something so simple has never tasted nor looked so good. Now this is hardly a recipe at all, in fact it’s a rather creative assembly of ingredients that make something rather lovely.So instead of writing a recipe, I’m just going to tell you about what kind of awesome combos ( sweet and savoury!) you can create. Obviously first and foremost you need some super sweet watermelon. Look for one with bright red flesh and seedless if you can. As for toppings, for mine (pictured above) I use a salty crumbly feta, olives, thinly sliced red onion and shredded mint. All of these flavours work incredibly well against the sweet melon flesh. I think this would also be super lovely drizzled with some punchy balsamic glaze. Served on a rustic board or platter, these slices are the perfect summer treat for a BBQ or just a relaxing Sunday afternoon don’t you think? But hold on! There’s more. Why not go for a sweet variety with strawberries, kiwi-fruit, shredded coconut, peach, nectarine, blueberries, raspberries and a drizzle of co-yo? Sprinkled with some sweet pistachio dukkah or dark chocolate even? Um, YUM! The variations are truly endless, you can make these however you want. I promise you’ll have a hard time stopping at one slice!
